Bees Knees

Bees Knees is a prohibition-era cocktail that is not only refreshing, but easy to make at home.  In more recent times, I have gained a new appreciation in enjoying simpler things like a perfectly done lager or a straight forward cocktail.  The imperfections or lack of balance in these things come through.  There is no covering any flaws.  And quite frankly, sometimes you want something refreshing when it's a million degrees.

The recipe is as follows -

Ice
2 ounces gin
3/4 ounce fresh lemon juice
3/4 ounce honey syrup (1 tablespoon honey mixed with 1/2 tablespoon warm water)

Fill a shaker with ice.  Add the ingredients to the mixer and shake it like a polaroid picture.  Use a strainer and pour into a cocktail glass.  Add a garnish such as lemon twist.  Drink.  Repeat numerous times.
